Breakfast, Lunch, Productivity and Lazy Days

Hello!

How are you on this sunshiney day?

Oh good!

So today i woke up, checked the time saw that it was around ten, and so i (after checking my oh-so-important facebook notifications) bolted out of bed, got dressed and made myself some breakfast.

PORRIDGE WITH BANANA, HAZELNUTS AND HONEY IS SO GOOD.

What you do (cheeky little recipe in here ;) ) is you weigh out 50g of quicking cooking oats, NOT instant and not jumbo (i use Sainsbury's Scottish Organic Porridge Oats). You then measure 270ml of milk/water or a combination of both (i normall use half to a third soya milk and the rest water), and put it in with the oats and just cook on a high heat until however cooked you like it to be! Pour it into a bowl, Then mash up (not too much) 1/2 or 1 banana, and throw it in. Throw some hazelnuts on there, drizzle some natural honey and bobs your uncle!
Good lord, it does taste good.

What did i do after that... ummm, i youtube-d. For a long time. Then i pulled myself together and did my english homework, made pea, mint and courgette soup (recipe below) ate it with a load of bread and dips and stuff with me fam, and now here we are!

Anyway, what did you guys do today? I'm going to head out with me mum to do my history homework thing and probably do more homework... sad face :( heheheh at least it's still warm!

I never know what to wear on lazy days, which is stupid because the should be the easiest days to dress for? Well, not lazy days - actually a lot of the time "lazy days" are quite productive. You blog, vlog, do homework, cook, bake all that stuff! But i never know what to wear?! Do i dress in jeans and a cute top like it's a normal but casual day? Joggers and a hoodie? Leggings? Jumpers? Cardigans? i end up re-dressing!
Right now i'm "sporting" a nice top, an oversized cardigan and some leggings. That way, if i have to go out i won't feel like a knob because I'm dressed in sports gear, when in actual fact i've been sitting at home watching makeup tutorials, but i won't feel all uncomfortable in something at home when i'm trying to snuggle up in a blanket like a hedgehog. (excuse my language up there ^^^)

Anywho, i think that's it!

Pea, Mint and Courgette Soup!

You'll need:

  • One onion, or (if you're lucky) a bunch of spring onions
  • 3 courgettes
  • 900ml of veggie stock
  • 200g of frozen, or fresh peas
  • a large handful of fresh mint
  • greek or soya yogurt (2tbsp plus extra for serving)
  • Salt (if needed) and pepper.
First of all, chop up your onions and courgettes. Then heat a splash of olive oil (or a knob of butter) in  a large saucepan, and chuck in your onions and courgettes. Lower the heat to medium, cover, and cook for 3 minutes.
After your 3 mins, throw in the stock and peas, bring to the boil then cover, simmer and let that do it's thing for 4 minutes.
(whilst it's doing that, prepare your food proccessor, get your mint ready and do a little boogie to some jolly summer songs)
Take the pan off the heat, and stir in your mint until wilted. Throw it into your food processor in two batches, and on the second batch, at the yogurt.
Pour back int the pan, keep the heat on until everyone is ready and season to taste.
Pour into bowls, and put around a tsp of yogurt on. Serve with fresh bread and as many dips as possible!
