Chocolottie Biscotti

Hello! Okay second post for today, i have no plans for today so there might even be a third post later! i'm always blog crazy on the first day ;)

So I adore this recipe - it's not vegan, but it is naturally dairy free! I don't think I'd ever tried biscotti before this recipe, but I ADORE these. I feel like chocolate makes everything better; and these aren't overpower-ingly chocolate-y, these are more subtle with a kick of the chocolate chip. Feel free to change up the nuts, but almonds are rather traditional :)

These are perfect for a mid-morning snack or with a spot of afternoon tea!

 *Makes two logs of biscotti, and biscuits depending on how big you cut them

Ingredients:
125g whole almomds
100g plain bittersweet chocolate, chopped into large polka dots sizes
250g plain all purpose flour
2 tbsp unsweetened cocoa powdwe
150g castar sugar (though "sweet" things are my prefer'd course, i don't have a very big sweet tooth so I normally add around 120g, but 150 is lovely too :))
1 tsp baking powder
3 large eggs

Instructions:


  • First of all, preheat the oven to 180 celcius, 350 farenhit or gas mark 4, and line two baking sheets with non stick parchment paper. 
  • Then chop the almonds roughly, not too small. 
  • In a large bowl, mix all the ingredients apart from the eggs.
  • In a glass or separate bowl, lightly beat the eggs then stir them in until your form a nice strong ball of dough (I start off with a wooden spoon then use my hands). If the dough is too sticky, gradually add more flour.
  • Halve the ball of dough and shape each ball into a flat loaf shape, 3cm in height and 20cm in length.
  • Put the two loaves onto the baking sheets and bake for about 20 minutes
  • After that (or until they are cooked all the way through), remove them from the oven and leave them to cool but do not turn the oven off
  • When cooled, cut each loaves into slices. They should roughly be about 5mm in thickness, but you could just eyeball it.
  • Return them to the oven for another 10 minutes, then take out, flip them so the other side faces up and put them back in the oven for 5 minutes.
  • Transfer to a wire rack and wait for them to cool (if possible! Hot chocolate chips are HOT, but worth the pain.)
